Easy Mexican Coleslaw

This easy Mexican coleslaw has the flavors south of the border perfect to accompany tacos, fajitas, and more. This mayo free recipe is perfect for your next BBQ, picnic or just family dinner.

I’m one of those people that want something more than meat in my tacos. Regular lettuce and cheese just don’t do it for me. That’s where this easy Mexican coleslaw came to life.

Not only is this a great topping for tacos it’s great just as a side dish alone. I ended up eating half of the bowl alone with a side of tacos.

How to make this easy Mexican coleslaw

Add the shredded green cabbage to a bowl (Photo 1) and then add the shredded red cabbage to the bowl (Photo 2)

Next add the chopped cilantro (Photo 3) lime juice (Photo 4) sour cream (Photo 5) and honey (Photo 6) to the bowl and stir really well (Photo 7)

Cover and store in the refrigerator for an hour so the flavors can soak in.

Tips

  • This recipe is for a smaller batch of Mexican coleslaw. If you need enough to take to a BBQ or a bigger group double everything in the recipe or even triple it.
  • If you are short on time you can buy pre shredded cabbage in a bag in the produce section.
  • If you want to add some additional items diced tomatoes, chucks of mango, or tortilla strips go perfect in this recipe.

What can I use this coleslaw for?

  • This Mexican coleslaw is great to have alone as a side dish maybe for a gathering you are having or just your family dinner.
  • Making tacos, especially street style tacos? This goes great right on top in your taco.
  • Making a burrito bowl, add this instead of lettuce. A nice crunchy alternative.
  • This is a great addition to some nachos. After heating up your nachos just add this Mexican coleslaw right on top.

Ingredients

  • 3 cups shredded green cabbage
  • 3 cups shredded red cabbage
  • 1/4 cup chopped fresh cilantro
  • 1 juice of a lime 2 TBSP
  • 1 TBSP sour cream
  • 1 TBSP honey

Instructions

  • Add green and red cabbage to a bowl along with cilantro, lime juice, sour cream and honey
