- 1 lb medium shrimp
- 1 green bell pepper
- 1 yellow bell pepper
- 1 onion
- 2 tbsp olive oil
- 1 tbsp chilli powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lime
- 1 bundle cilantro optional
Preheat your oven to 400°F (200°C)
In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper
In a large bowl, toss the shrimp, sliced bell peppers, and onion with the olive oil and the seasoning mixture
Spread the shrimp and vegetable mixture out on a large baking sheet in a single layer
Bake for 8-10 minutes, or until the shrimp are pink and opaque
Remove from the oven and drizzle the lime juice over the top of the shrimp and vegetables. Toss to combine
Sprinkle fresh cilantro over the top of the fajitas, if desired
