Creamy Cajun Chicken Linguine

Ingredients

  • 1 lb linguine pasta
  • 2 large chicken breasts
  • 2 tbsp cajun seasoning
  • 1 tbsp olive oil
  • 12 oz can diced tomatoes
  • 1 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • salt and pepper to taste
  • fresh parsley as garnish

Instructions

  • Cook the linguine pasta according to package directions until al dente. Drain and set aside
  • Season the chicken strips with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken strips and cook until browned on both sides, about 5-7 minutes. Remove the chicken from the skillet and set aside
  • In the same skillet, add the diced tomatoes and cook until the liquid has reduced by half, about 5 minutes
  • Add the heavy whipping cream to the skillet and stir to combine with the tomatoes. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally
  • Add the grated Parmesan cheese to the skillet and stir until melted and combined with the cream sauce
  • Add the cooked chicken strips back to the skillet with the cream sauce and stir to coat the chicken
  • Add the cooked linguine pasta to the skillet with the chicken and sauce. Toss to combine until the pasta is coated in the creamy Cajun sauce
  • Garnish with chopped fresh parsley and serve hot

Notes

  • Season the chicken well: When cooking the chicken, make sure to season it with cajun seasoning. This will give it a nice flavor that will help spice up the sauce and pasta.
  • Save some pasta water: When you drain the pasta, make sure to save about 1/2 cup of the cooking water. This starchy water can be added to the sauce later to make it thicker and creamier.
  • Taste and adjust the seasoning: Once you add the sauce to the pasta, taste it and see if it needs more salt, pepper, or cajun seasoning. You can always adjust if you like things a little more spicy
  • Use fresh parmesan cheese: Instead of using pre-grated cheese, grate fresh parmesan cheese for a better flavor.
  • Add the tomatoes towards the end: Add the diced tomatoes towards the end of cooking the pasta so they don't become too soft and mushy. This will keep them fresh and juicy.
  • Garnish with parsley: To add a little bit of color and freshness to the dish, chop up some fresh parsley and sprinkle it on top of the pasta before serving. It will add a nice herbaceous flavor that will complement the cajun seasoning.
