Add olive oil and chopped onions in a pan over medium-high heat cook until soft.
In a small mixing bowl add spicy ketchup, spicy mustard, tomato sauce, Balsamic vinegar, brown sugar, beef stock, and Worcestershire sauce and whisk together well
In a larger bowl add all other remaining ingredients, including onions in a bowl and pour in all but 1/4 of ketchup mixture and mix all together.
Grease a 9x5 loaf pan and form meat mixture into pan pouring half of ketchup mixture on top and place in oven
Half way through cooking pour the remaining ketchup mixture on top and continuing cooking
Cook for one hour
