Salmon Patties

These salmon patties have a crispy golden crust filled with flavorful salmon inside. A southern classic that tastes great.

Ingredients

  • 1 lb salmon
  • 1/2 cup bread crumbs
  • 1/2 cup Panko bread crumbs
  • 1/2 cup mayo
  • 2 medium eggs
  • 2 TBSP butter
  • 2 TBSP olive oil
  • 1 TBSP spicy mustard
  • 1 TSP Worcestershire sauce
  • 2 TSP Toni's Cajun seasoning

Instructions

  • Preheat oven to 350 degrees and line a baking sheet with foil and grease and add salmon and cook for about 15 minutes.
  • Flake your salmon away from the skin and add to a bowl and let cool
  • Add regular bread crumbs, mayo, mustard, eggs, Worcestershire sauce, and 1 TSP of Toni's seasoning to the bowl of cooled salmon and mix together well
  • Cover and refrigerate at least for 30 minutes
  • Take a large skillet and add butter and oil and turn on medium high heat.
  • Divide the salmon patty mix into 6 equal parts and mix together Panko bread crumbs and the rest of the Toni's and roll each side of each salmon patty in the mixture.
  • Cook 3 patties at a time if you have the room 4 minutes on each side and after cooking let it rest on some paper towels to soak up some of the oil

Notes

  • Choose Quality Salmon: Whether you're using fresh or canned salmon, quality matters. Fresh salmon should be vibrant and firm to the touch, with a pleasant oceanic smell. If you're using canned, opt for versions without added salt or preservatives.
  • Don't Overmix: When combining your ingredients, be careful not to overmix. You want to keep some texture in the salmon for the best eating experience.
  • Chill Your Patties: Before cooking the patties, make sure you chill them in the refrigerator for at least 30 minutes. This will help them hold their shape when frying.
  • Temperature Check: Make sure your oil is hot enough before adding the patties. They should sizzle immediately when they hit the pan, which will give them that beautiful, crispy crust. But also, don't let the oil smoke - that's a sign it's too hot!
  • Don't Overcrowd the Pan: Cook the patties in batches if needed. Overcrowding the pan can lower the temperature of the oil and lead to soggy, oily patties.
  • Patience is Key: Resist the urge to flip the patties too soon. Let them cook undisturbed until they're golden brown on one side, then flip to cook the other side.
  • Drain Excess Oil: Once cooked, let the patties rest on paper towels for a few minutes. This will help soak up any excess oil, ensuring your patties remain crispy and aren't overly greasy.
