Cranberry Pomegranate Goat Cheese Tartlets

With these cranberry pomegranate goat cheese tartlets you will have not only a festive appetizer for the holiday season, but also a tasty one.

Ingredients

  • 8 Oz Goat cheese
  • 1 1/2 Cups Fresh cranberries
  • 1 1/2 Cups Pomegranate seeds 1 pomegranate
  • 1 Package Puff pastry
  • 1/4 Cup Sugar
  • 1/4 Cup Water

Instructions

  • Thaw pastry sheets and preheat oven to 400 degrees
  • Add cranberries, pomegranate, water, and sugar to a pot over high heat.  Cook for 15 minutes while stirring then remove from heat
  • Lay out pastry sheet and roll a little bit.  Use cookie cutters to cut out shapes of pastry sheet.
  • Lay parchment paper on 2 baking sheets and place dough cutouts on top.
  • Push down the center of eat cut out and then put cranberry mixture on top and the goat cheese
  • Cook in oven for 20 minutes or until the dough starts to turn golden
