Ingredients

  • 3 mahi mahi filet
  • 2 tbsp olive oil

Blackening Seasoning

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp thyme
  • 1/4 tsp cayenne

Mango Salsa

  • 1 cup cherry tomatoes
  • 1/2 cup mango
  • 1 medium avocado
  • 1/4 cup cilantro
  • 1 juice of a lime

Instructions

  • Chop up tomatoes, avocado, mango, and cilantro and add to a bowl and mix together with the lime juice and refrigerate 
  • Add all blackening spices together and mix
  • Pat fish dry an add seasoning to all sides of the fish
  • Add olive oil to a pan over medium/high heat and once heated add fish to the pan.  Cook for 4 minutes on one side then flip and cook for another 4 minutes
  • Plate the fish and top with the salsa.
