- 1 tbsp olive oil
- 1 large onion
- 3 garlic cloves
- 1 lb ground turkey
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- salt and pepper to taste
- 4 cups low sodium chicken broth
- 2 cups no salt added crushed tomatoes
- 6 oz whole grain lasagna noddles
- 1 cup part-skin ricotta cheese
- 1/2 cup grated parmesan cheese
- 1 cup low-fat mozzarella cheese
Heat the olive oil in a large pot over medium heat. Add the onion and garlic, cooking until softened.
Increase the heat to medium-high and add the ground turkey or chicken. Cook until browned.
Season with oregano, basil, red pepper flakes, salt, and pepper.
Stir in the broth and crushed tomatoes. Bring to a boil, then lower the heat to simmer.
Add the broken lasagna noodles and cook until tender, about 15 minutes
Just before serving, stir in the ricotta and parmesan cheese. Top with mozzarella and allow it to melt.
