Chicken Avocado Salad
This tasty avocado chicken salad
is the perfect lunch meal with a
Mexican twist. Fresh and light
meal not bad on the waist line either.

Avocados are just so yummy, aren’t they? So many things taste so much better with some avocado added to it. Chopped, sliced, diced, or even used as a bowl you can used avocados in so many different ways.
Chicken and avocados basically go hand in hand. So why not make a chicken salad with avocado included in it. To make it even better add a little Mexican twist.
This was actually my first time using this salsa verde. Of course I’ve had it before at various Mexican food restaurants, but why not try cooking with it? It has such a great tangy flavor that I love.
This recipe is for one person so if you need it for more people just multiple everything. I took one chicken breast and sliced it in half for easy and a quick cooking. I just rubbed some olive oil on them and seasoned with some taco seasoning.
If you don’t have this Cuisinart 5-in-1 Griddle then you are missing out. I love this little kitchen gadget. It’s perfect for those days you don’t want to grill out on the grill. Plus it does so much more than just grilling.
After the chicken is cooked just take two forks and sheered the chicken. After that just throw the chicken in a bowl and add the salsa verde, mayo, cilantro, jalapenos, lime juice and cayenne and mix together.
Take your avocado and cut in half and peel carefully. These were smaller avocados so I dug some of the insides out to make room for the chicken salad. Then all you do is fill the avocados with chicken salad and enjoy.
Chicken Avocado Salad
Ingredients
- 1 half of a chicken breast
- 1 avocado
- 4 TBSP salsa verde
- 2 TBSP chopped jalapenos
- 2 TBSP mayo
- 1 TBSP chopped cilantro
- 1/2 TBSP taco seasoning
- 3 TSP of lime juice
- 1 TSP olive oil
- 1/8 TSP cayenne pepper
Instructions
- Slice chicken breast in half long ways and rub with olive oil and then taco seasoning and then cook. After cooking shred
- Mix together all remaining ingredients except the avocado
- Cut avocado in half and peel carefully. If needed dig out some of the insides of the avocado
- Fill the inside of the avocados with chicken salad
