I’m always looking for new side dishes to add to our dinners. And I can’t get too creative because my husband is the pickiest eater EVER. He is that meat and potatoes type of guy.
So when it comes to potatoes I want to switch them up how to prepare them. I’m always using different spices to change them up, but thought about what about using a liquid to season them.
And that’s where this recipe came about. I personally don’t use spicy mustard unless it’s in my meatloaf. I prefer just regular ole mustard or my jalapeno mustard for all other things.
But I always keep this spicy mustard on hand for meatloaf or when we have BBQs at the house. Something I did notice was the spicy mustard had a strong flavor. Like too strong. That’s why I add sugar into the mix to bland it out a little bit.
Just add your mustard, olive oil, and sugar in a bowl and whisk. Chop up your potatoes into bite size pieces and throw in a bowl and pour the mustard mixture over and stir.
Lay the potatoes out on a baking sheet and cook for about 50 minutes. I stir the potatoes around about every 15 minutes or so for even cooking.
And just like that you have a great side dish to add to your next meal.
Spicy Mustard Potatoes
Ingredients
- 2 lbs red potatoes
- 3/4 cup spicy mustard
- 3 tbsp olive oil
- 1 tsp lemon juice
- 2 tsp sugar
Instructions
- Preheat oven to 400 degrees
- Chop potatoes into bite size pieces and put in a bowl
- Mix together all other ingredients and pour over potatoes and mix
- Add potatoes to a baking sheet and cook for 50 minutes. Stirring potatoes every 15 minutes
