Bacon Wrapped Ranch Chicken Poppers

It’s almost Super Bowl time. I know some of y’all have been planning for the big day for awhile now. And what is most important besides the actual game is the food. Well food and drinks. Can’t forget the alcohol.

Planning what you and your guest are going to munch on during the game are very important in my opinion. But if it’s not obvious food is always important especially when feeding a group of people.

I would love to plan great outside grill recipes because what screams football more than grilling, but it is the very beginning of February. And because I live in Texas the weather is hit or miss. A couple years ago it was warm and sunny and perfect weather. And then there could be an ice storm, you just never know when you live in Texas.

That’s why these poppers work great just popping in the oven and even have a nice char on them just like if you threw them on a grill.

I used some rotisserie chicken for this recipe because simple is better in my opinion. All you do is pull that chicken off the done in chunks and throw it in your mixer for a minute and now you have shredded chicken.

Mix that chicken with your softened cream cheese, ranch dressing seasoning, and red pepper flakes and you stuffing is ready to go. I could just eat the mixture alone it is so good.

Cut your jalapeños in half longways and get out all the insides. I highly suggest getting out all those seeds because if you leave them and heat those babies up, man your mouth is going to be on fire. You don’t want to kill your guests by leaving the seeds.

Just fill those jalapeños up with your chicken mixture and now it’s time to wrap them. From trial and error I think using a whole piece of bacon for each jalapeño is best. I used half a piece on some of the smaller ones and all that resulted in was the bacon coming off the jalapeños as the bacon cooked. Bacon naturally shrinks when it cooks.

Now pop those in the oven for about 25 minutes. My oven did become a little smoky towards the end, but I just turned on vent hood and that fixed that. I like to pull them out when it seems like all the bacon is cooked and even has a little char on the tips.Transfer to your serving dish and they are ready to go. I actually made these for a party I went to so they weren’t serve piping hot, but I can tell you everyone of these poppers were gone quick. I was really shocked how fast they went. So that must mean they were that good.

So if you need something tasty and relatively easy for your super bowl party these poppers are for you. Make them and set them out and watch them disappear.

Bacon Wrapped Ranch Chicken Poppers

Ingredients

  • 2 Cups Shredded chicken
  • 10 Jalapenos
  • 8 Oz Cream cheese
  • 2 Tbsp Ranch dressing seasoning
  • 20 Slices of bacon
  • 1/2 Tbsp Red pepper flakes

Instructions

  • Preheat oven to 400 degrees and let cream cheese set out to soften
  • Cut jalapeños longways and dig out all the seeds
  • Shred your chicken and add cream cheese, ranch dressing seasoning, and red pepper flakes and mix together well.  A mixer really helps with this.
  • Add the chicken mixture to each jalapeño half and wrap each one with a piece of bacon starting the wrapping on the backside of the jalapeño 
  • Place on a baking sheet and pop in the oven for 25 minutes.  Watch towards the end to make sure the bacon doesn’t char too much.
