These stuffing potato bites are so simple to make and are the perfect
starter for your Thanksgiving day. Four ingredients is all you will need.

Thanksgiving is just a few short months away and if you’re anything like me you are planning ahead. I’m always trying to think of new appetizers to keep the masses happy before digging in to the big feast.

That’s where this stuffing potato bites come in quite handy. So simple to make and only a few ingredients needed.

Why this recipe works

  • With only 4 ingredients (5 if you included water) you really can’t get any simpler than that.
  • You can also use ingredients you are already making for the big meal instead of buying the ones above.
  • This recipe is cooked at the same temperature as a turkey so you can just pop these in on the bottom rack if you are a one oven person like me.
  • This recipe combines the best parts of turkey day (or in my opinion) the stuffing, potatoes, and gravy.
  • You can also make these ahead of time and then just pop in the microwave for about 30 seconds and they are just like you popped them out of the oven

Ingredients you will need

  • Stove Top Stuffing– I prefer the savory herb flavor, but the turkey one works great too. Or any stuffing will work, this is just my favorite and so easy to make.
  • Mashed Potatoes– for this recipe I like to use instant potatoes because it makes this recipe so simple. If you rather use some homemade potatoes more power to you.
  • Turkey Gravy– you’re using this as a dip, so some instant kind or jarred gravy works great. If you want to use some of the gravy you have already prepared for the turkey that works great also.
  • Butter– because you need this to make the stove top stuffing

Making the Stove Top Stuffing

Add the amount of water the Stove Top Stuffing box calls for to a medium hot pan along with the butter (Photo 1) and bring to a boil. Once the butter is melted add the Stove Top Stuffing mix to the pan (Photo 2)

Stir the stuffing mix (Photo 3) until all stuffing has soaked up the water and then cover and remove from heat (Photo 4) and let sit for 5 minutes before fluffing with a fork.

Making the Potatoes

Microwave the amount of water the instant potatoes calls for for 4-5 minutes. Add the instant potatoes to the water (Photo 5)

Stir with a fork (Photo 6) until you get the consistency of mashed potatoes (Photo 7) and set aside.

Assembling the Stuffing Potato Bites

Take a mini muffin tin and spray it with cooking spray (Photo 8) Take 1/8 cup of the stuffing and push it down and along the sides of the muffin top to form a small bowl (Photo 9) and repeat to all the muffin tins (Photo 10)

Spoon in the mashed potatoes into stuffing bowl (Photo 11) Repeat with each stuffing bowl (Photo 12) Cook for 18 minutes (Photo 13)

Once cooked pop them out with a spoon and serve on a plate with gravy. If you’re using the instant gravy just heat up the water and gravy in the microwave.

Tips for this recipe

  • You can cook these a little bit ahead of time and then pop them in the microwave for 30 seconds to a minute.
  • If you already have extra stuffing, mashed potatoes, and gravy on hand you don’t have to buy any extra ingredients. Just use what you have.
  • You could do something different and make these in bigger muffin tins and serve your stuffing and mashed potatoes like this for your turkey day meal.
  • You can also put the mashed potatoes in a ziploc bag and cut a small slit at the corner and squirt the mashed potatoes into the stuffing cups for a nicer looking display.
