starter for your Thanksgiving day.

Thanksgiving is just right around the corner. In a matter of days homes will be filled with family and lots of yummy food. The day of stretchy pants and way too much food. Don’t you just love it? If you’re lucky enough like me you have multiple Thanksgivings to go to due to being married and divorced parents.
Last year I agreed to host Thanksgiving at my house for one set of family members. Of course I came down with something and felt like death. My mom had to step in and do everything for me. One thing I didn’t have was some good unique appetizers. Just the plain ole veggie tray and deviled eggs. I wanted something a little more festive.
Then months ago I came up with an idea combining two of my favorite parts of Thanksgiving; stuffing and mashed potatoes and gravy. I’m kind of obsessed with mini appetizers too. They are just so cute and I love bite sized foods.
All you need is a box of stuffing, some mashed potatoes and turkey gravy and you can make these stuffing potato bites. You don’t even have to use the stove top stuffing and instant potatoes if you don’t want. If you have extra of both already made and ready to go you can just use that.
You want to preheat your oven to 375 and cook both the stuffing and instant potatoes as directed on the packages. Take a mini muffin tin and grease it with some Pam or butter.
Take about a 1/8 cup scoop of stuffing and push it into the muffin tin to form a bowl like shape. After all the tins are full of stuffing take the mashed potatoes and fill the stuffing cups with it. Now just pop in the oven for about 18 minutes.
While these are baking make your turkey gravy as directed on the package. If you have gravy already prepared from your turkey you can just use that.
Once the stuffing potato bites are done cooking just take a fork and pop them out of the tins and serve with a side of gravy.

Stuffing Potato Bites
- 1 box of Stove Top Stuffing
1/4 cup of butter
- 1 bag of instant potatoes
- 1 package of turkey gravy
- Preheat oven to 375
- Cook stuffing and instant potatoes as directed on packages
- Grease a mini muffin tin
- Fill tins with 1/8 cup of stuffing forming a bowl like shape
- Fill stuffing cups with mashed potatoes
- Cook for 18 minutes
- While cooking prepare gravy as directed on package
- Pop bites out of tins with fork and serve with a side of gravy
