Sriracha Potatoes
These Sriracha potatoes are simple to make and would be a great addition to your dinner. With only 3 ingredients this side dish can’t get any simpler to make.
So is everyone still on this Sriracha obsession phase? I mean there for awhile people couldn’t get enough of the stuff. So much so you saw those mini Sriracha bottles on key chains so you didn’t have to go anywhere without the stuff.
Then there was the Sriracha shortage at the end of 2013. You would have thought people were going to lose it. Even big name news networks were talking about it. Well good thing that was short lived.
I can say I do keep a bottle of this stuff on hand. I’m not one of those people who puts it on everything, but I do enjoy it. I do love finding a good hot sauce. I am a sauce girl though. Everything is just that much better with a little sauce added to it.
So I was looking for a way to switch up a common side dish of potatoes. I’ve done past potato dishes like my zesty potatoes, spicy ranch potatoes, and my latest spicy mustard potatoes. But in a meat and potato household (not me, but my husband) you’ve got to keep things new because serving the same thing over and over gets boring.
Even though this recipe is pretty darn simple with only 3 ingredients, you could make it simpler by omitting the mayo, but I think the mayo is a must. It gives it kind of a creamy flavor. So I wouldn’t skimp on the mayo.
I kept this recipe pretty family friendly with the amount of Sriracha I used. Not too much where it’s actually spicy, but just gives it some flavor. Now if you’re like me and love spice I would suggest doubling the Sriracha.
All you have to do for this recipe is chop up your potatoes, mix together your mayo and Sriracha and then add that to your potatoes and mix. Pop those in the oven and in an hour you have a tasty side dish.

Sriracha Potatoes
Ingredients
- 2 lbs red potatoes
- 1 cup mayo
- 2 tbsp sriracha
Instructions
- Preheat oven to 400 degrees
- Chop up potatoes into bite size pieces
- Mix together mayo and sriracha and add to potatoes and mix together
- Grease a baking pan and add potatoes and cook for 1 hour. Turn potatoes every 15 minutes
