Say NO to boiled brussels sprouts, which made you grow to hate brussels sprouts as a child. Talk about EWWWW. But baking, frying, or pan cooking brussels sprouts with a little extra flavor really makes these things become quite tasty.
And let’s not forget that brussels sprouts are great for you as well/
Some Benefits of Brussels Sprouts:
- Rich in antioxidants
- High in fiber
- Reduce inflammation
- Loaded with Vitamins ( K, C) (source)
Variations for This Recipe:
- Don’t have a mandoian shaver or just don’t really feel like shaving the brussels sprouts? No problem! You could chop the stem end off pf the brussels sprouts and slice them down the middle longways. You might have to cook them a bit longer but taste just as good.
- Want to have a sweet and spicy flavor? Add about a TBSP of honey to your balsamic vinegar before adding it to the brussels sprouts. The honey brings out a little sweetness which goes great with the brussels sprouts
- Want something crunchy? Sliced almonds or walnuts go great with brussels sprouts. Just add them towards the end of cooking
Ingredients for Brussels Sprouts with Spicy Mayo:
- Fresh Brussels Sprouts– you can pick up a 1 lb bag at most grocery stores
- Onions– I used a red onion, but a sweet one would go good too
- Bacon Bites– You can buy some premade or make your own
- Butter– because doesn’t it make everything better
- Balsamic Vinegar– to flavor the brussels sprouts with
- Mayo– can’t have spicy mayo without it
- Sriracha– I use enough for a medium spicy flavor, but you can use more or less depending on spice preference
Prepping the Brussels Sprouts
Get out your mandolin slicer and put it over a plate or bowl (Photo 1) Rinse and dry your brussels sprouts (Photo 2) and start shaving each one starting at the opposite end of the stem. (Photo 3) and shave it down about 3/4 of the brussels sprout
After all your brussels sprouts are shaved (Photo 4) start to pick out the whole pieces that are really part of the stem (Photo 5) and after picking through set side (Photo 6)
Sauteing
Over medium high heat take a large pan and melt the butter in it (Photo 7) Next add the sliced onions to the pan (Photo 8) and stir around for about 5 minutes (Photo 9)
Next add the bacon bits to the pan (Photo 10) and stir around for about 3 minutes (Photo 11)
Cooking
Now it’s time to add the shaved brussels sprouts to the pan (Photo 12) and then add the balsamic vinegar to the pan (Photo 13) and stir everything around, mixing it all together (Photo 14) for about 10 minutes and set the pan aside off the stove (Photo 15)
Prepping the Spicy Mayo
Take a ziploc bag and add the mayo to the bag (Photo 16) and then the sriracha (Photo 17) and seal the bag closed and start to mush the bag around (Photo 18) mixing the 2 together well (Photo 19)
After you plate the brussels sprouts cut a small slit in one of the corners of the ziploc bag and squeeze the spicy mayo out of the bag to make a drizzle.
Tips & Tricks
- If possible use a mandolin slicer. You can use a knife, but you probably aren’t going to get as thin as slices and it’s going to take awhile
- Buy premade bacon bits for a quicker process or fry up some slices and chop them up
- Use the mandolin slicer to slice up your onion
- Use a ziploc bag to mix and to drizzle the spicy mayo by cutting the very tip off the ziploc bag
