Creamy Spinach Artichoke Chicken

This creamy spinach artichoke chicken is full with a rich flavor, but with less calories. Perfect all in one meal for your next dinner.

Why are all the good tasting foods not healthy for you? Pizza, pasta, a juicy bacon cheese burger. Not to mention creamy dishes. I love all things creamy. Just go ahead and pour it on. But what if you could still have that rich cream flavor with cutting out some calories? This recipe does exactly that.

What can I serve with this Creamy Spinach Artichoke Chicken?

With this recipe you’re getting a nice dose of protein and veggies so serving this over some pasta or with a side of potatoes adds a nice starch to the recipe. Trying to stay away from the carbs? Make a nice salad to accompany this dish.

I need to feed more than 2 people…

Not a problem. You can easily add 2 more chicken breasts to this recipe without having to add any other ingredients. Maybe if you want to throw in a little extra spinach that shouldn’t be a problem.

What you need for Creamy Spinach Artichoke Chicken:

  • Chicken Breast- I use 2 chicken breast for this recipe but you could easily add an extra 2 if needed
  • Cream Cheese– I use low fat cream cheese to make this dish to make it a little bit healthier, but regular cream cheese works just as great
  • Chicken Broth– to thin out the cream cheese
  • Fresh Spinach– I prefer fresh spinach for this recipe, but frozen could be used as long as when you defrost you get out as much as the water as possible
  • Canned Artichoke Hearts– A full can drained and chopped up
  • Minced Garlic– Fresh minced garlic is recommend, but if in a pinch canned minced garlic will work
  • Olive oil– to brown your chicken breast

Browning the Chicken

Preheat your oven to 350 degrees. Take an oven safe pan and heat to medium/high heat and add olive oil to the pan (Photo 1) Add the 2 chicken breast to the pan and cook for 5 minutes (Photo 2)

Flip the chicken breasts over and cook for another 5 minutes until both sides have a nice golden color.(Photo 3)

Making the Sauce

Add the chicken broth to the pan with the chicken in it (Photo 4) and then break up the low fat cream cheese and add it to the pan (Photo 5). Keep stirring the cream cheese around (Photo 6) until it is fully melted (Photo 6)

Making Creamy Spinach Artichoke Chicken

Add the minced garlic to the pan of chicken and cream (Photo 8) and then the chopped artichokes (Photo 9) Now add the fresh spinach to the pan (Photo 10)

Stir around and mix all the ingredients together (Photo 11) until the spinach is a little wilted and covered with sauce (Photo 12) and then transfer to the oven for 20 minutes until the chicken is cooked.

After done cooking add the chicken breast to your individual plates and add the spinach artichoke cream sauce on top.

Tips for this Recipe

  • Be sure and use a pan you can use in the oven. A cast iron pan works perfect for this recipe
  • Need to feed more than 2 people? You can easily add a couple more chicken breasts to this recipe and make it a meal for 4
  • Don’t have fresh spinach on hand? You can use frozen spinach by completely defrosting the spinach and then putting it in a strainer and pushing out all the water you can
  • You don’t have to use low fat cream cheese for this recipe. Regular cream cheese works just as well. If calories don’t matter go for the full fat cream cheese
  • This is basically a complete meal, but if you are wanting something more add some pasta or potatoes to go with this recipe like these Zesty Roasted Potatoes
  • If you are using extra big chicken breast make sure the chicken is fully cooked after the 20 minutes cooking time. You can do this by cutting into the thickest part of the chicken

Ingredients

  • 2 chicken breast halves
  • 4 cups fresh spinach
  • 1 can of artichokes hearts chopped
  • 1 cup chicken broth
  • 8 oz low fat cream cheese
  • 2 TBSP minced garlic
  • 1 TBSP olive oil

Instructions

  • Preheat oven to 350 degrees
  • Use a oven safe pan and add olive oil over medium-high heat
  • Add chicken breast and brown both sides cooking 5 minutes each side
  • Add chicken broth and broken up cream cheese to the pan and stir until the cream cheese is melted
  • Stir in garlic, artichokes, and spinach cook for a couple minutes stirring regularly until the spinach is somewhat wilted
  • Put pan in oven for 20 minutes or until chicken is fully cooked.
